The Pacifiers: Mini Cucumber Salad with Salmon

A few weeks back I had friends over for dinner. I wanted to do a three course dinner but not spend a lot of money. So I chose to work with one ingredient as much as I could; cucumber. I serve cucumber salad for the hors d’oeuvre and appetizers, Grilled Pork Chops With Cabbage and Sesame Slaw for the entree, and tiramisu for dessert.

The cucumber salads were the same at the base, but had slightly different ingredients and look. I decided to serve the hors d’oeuvre, which I name the Pacifiers, in mini fillo shells. For that I had to chop everything very small. To give it a different taste I added goat cheese and put a small piece of smoked salmon at the bottom of the shells and topped the filling with a small piece of salmon as well. The appetizers had a little bit of wasabi mayonnaise. They both turned out to be delicious and tasted different.

I could really see myself make a platter of the Pacifiers, leave it in the fridge and use it as a snack throughout the day. It’s light and healthy. Why not?

The base of cucumber salad consist of: chopped cucumber, chopped red onions, chopped tomatoes, salt, pepper, garlic powder, a bit of olive oil and vinegar.

For the hors d’oeuvre add: goat cheese, a bit of mayo. Avoid the creamy texture, unless that’s what you like.

For the appetizer: add wasabi mayonnaise. I like it spicy.


The grilled pork chopped cabbage is a delicious recipe I got from Real Simple. It’s really easy and quick to make. The wasabi mayonnaise I got from Trader Joe’s and the mini fillo shells I purchased from the grocery store.
